Tropical Kale Salad

I’m not one to go for the greens.

I’ve never been a huge fan of salads. There’s just something about almost all salads that makes them seem completely and totally boring. Maybe it’s the fact that they’re all just a bunch of lettuce, topped with thick dressing and tiny veggies.

Sometimes, out of nowhere, I’ll just crave a giant, cold salad. I satisfied that craving by giving a regular salad a face lift.

THE REVIEW

Seriously easy. Seriously delicious.

The course Kale leaves with the soft fruit give the bowl a range of texture. The sweet fruit and the salt give the salad so much flavor, it’s like you’re eating some foreign salad from another planet. Let’s be honest, this salad is out of this world.

It’s filling and healthy. Kale is great for you, you know! Plus, it’s topped with all that fruit, who could resist?

I want to open a restaurant someday.

Check out the drawing I did for my make believe restaurant. I want to have a veggie corn dog called the Unicorndog, eh, eh? cricket.
