Pieday Friday: Peach Pie Secrets

For as long as I can remember, I’ve been in love with one fuzzy fruit. They’re sweet and squishy, and remind me of summer. They’re peaches.

So last week when I went to the Farmer’s Market, I was beyond ecstatic when I saw that a few booths had Indiana Peaches for sale. What’s the difference between an Indiana Peach and any other peach? Well to be totally honest, I have no idea. They’re grown in Indiana, I guess.

Immediately, I swiped up a basket of peaches (for only $5!!!) and ran home to bake! I’ve never been a huge endorser of peach pie, but after consulting Isa’s Vegan Pie in the Sky, I found a few ways to make the perfect peach pie for a summer cookout!

BASIL IS BETTER!

When you’re making that perfect Peach Pie and the peach flavor is just overbearing and too sweet, try adding a few trimmed basil leaves (about 8) to the filling. This will calm the sweet flavor and add a little bit of a savory, spicy flavor the mix. The smell of the basil is also very appealing and lures guests in. 😉

BUTTER IS BEST

With the crust, go for a rich, buttery flavor. Check out Isa’s Double Buttery Crust if you’re vegan. Otherwise, non-veg friends, go with the full on Crisco or margarine. The rich buttery taste will really compliment the sweetness of the peaches and the spice of the basil. The crust should be somewhat doughy in the center and crisp on the edges. This way, there will be a variety of textures in your pie. The soft peaches, doughy crust, and crispy edges will leave you singing!

BLANCH AND SCORE

It’s always best to use ripe, soft peaches for your pie. For one, they taste the best. Secondly, they’re easiest to peel. To get the skin completely off of your peaches, start by cutting an “X” in the bottom of each peach. Boil in a large stockpot for 1 minute, then let cool in an ice bath for three minutes. After the peaches are cool, begin peeling from the “X” you made. The skin should come off in large pieces, of not one piece.

TAKE YOUR TIME

Peach Pie is an art. Rome wasn’t built in a day. Take your time. Make that lattice crust, and make it beautiful! And most importantly, take the time to really savor those delicious flavors of summer.
