Carrot-Cabbage Slaw

I’m picky about my coleslaw. It’s true. It’s either too much of something or not enough of another.

This coleslaw is vinegary, but sweet. It’s a perfect, light side dish to any summer food (like Beanball sandwiches, Veggie Loaf, or Beet Burgers!

Adapted from 1001 Ways to Cook Southern


3 medium sized carrots, shredded
1 cup shredded cabbage
1 inch piece ginger, grated
3 Tablespoons Balsamic Vinegar
1 Tablespoons chopped fresh mint
1 Tablespoons Olive Oil
1 Tablespoon Agave Nectar
Pinch Salt


In a small mixing bowl, combine all ingredients.

Cover and chill until your ready to serve.

Store in an airtight container.

Who can complain about something so healthy and easy? This slaw omits the normal dairy products and instead focuses on the strong flavor of balsamic vinegar and cabbage. I loved the sweet taste of carrots plus the agave nectar. it was really interesting how much freshness the mint provided to the mix. It was like eating a really clean salad. This slaw makes for the perfect side dish that will compliment any Summer meal.

Plus, look at those bright colors! Orange and purple are my favorite colors, you know! 🙂
