I’ve come up with this smoothie for my post-workout/breakfast smoothie. I say post-workout because it has protein in it (peanut butter) as well as antioxidants and fiber (Blueberries and raspberries) and it’s just a great tasting smoothie to start my day!
1/2 cup frozen blueberries
1/2 cup frozen raspberries
1/4 cup unsweetened almond milk
1 Tablespoon Flax Seeds
1 Tablespoon Peanut Butter
1 Tablespoon Plain, Low-fat Yogurt
Put all ingredients into a food processor.
Process until smooth and raspberry and blueberry chunks are completely gone. The smoothie should be a great mauve color.
It’s that simple, and seriously great! The berries are the most prominent flavor in the smoothie, but the peanut butter gives it a slight nutty flavor and a creamy texture. The smoothie is tart since it has a lot of berries and the yogurt, but it jam-packed with flavor.
I think I’ve found a new favorite fruit and it’s name is Grapefruit. Growing up, my parents always ate grapefruit and I hated, no, despised it. When I went grocery shopping the other day, I decided to give grapefruit another shot. I bought one-only one-to try it out.
This morning, I decided it was time: I broke out the grapefruit, cut it in half, and began to dissect it. I wasn’t sure how to eat it at first, but once I got the hang of it, I wanted it to last forever! I will be buying a giant bag of grapefruit when I go grocery shopping again.
The grapefruit was really filling too, making for a great breakfast! Tonight, I’m planning on making BBQ Tofu with some roasted red potatoes! I’ll let you know how it goes!
