It’s the week before spring break and all my professors feel the need to have midterms a week late, thus leaving me in a state of panic.
After tomorrow though, I’ll be done with my midterms and ready for Spring Break! Hooray!
In the midst of studying, I needed a break to share with you:
DREAMSICLE OVERNIGHT OATS
These guys are fast and easy to make and fit my criteria for Lent. I made them this weekend for Cory when he was here and I had them for breakfast 3 times!
Also, Oh She Glows has become one of my favorite blogs. She has a really great story and tons of recipes.
THE RECIPE ACCORDING TO THE HEARTY HERBIVORE
2 oranges, peeled and chopped
1/2 cup old fashioned oats
2 Tablespoons Flax Seeds
2 Tablespoons Soy Creamer
2 cups Unsweetened Almond Milk
Unsweetened shredded coconut, to garnish
In a medium sized bowl, mix together oranges, oats, flax seeds, soy creamer, and almond milk. Stir well, making sure to cover the oats in the liquid ingredients.
Place in fridge and let the mixture sit overnight.
In the morning, serve with shredded coconut topping.
Simple enough, yes?
I’m a huge oatmeal person, so I was really excited about this recipe. I’d like to try it again when I’m not on my sugar-fast and can use a little bit of sweetener.
The best bites of this oatmeal had a little bit of everything-oats, milk, coconut and most importantly, oranges. Without the oranges, it was a little bland, but if you use sweetened coconut, this may change things.
I also recommend letting it sit for a few minutes after you take it out of the fridge, otherwise it’s so cold that it’s strange to eat. So cold, it’s tasteless.
Wow! I can’t believe I’m almost two weeks into this mess!
I’ve been sweet-treat-free and I’m feeling pretty good. There’s no change that I’m really noticing, whether it be physical or something else. I guess I do have an easier time waking up in the morning because I’m never sugar-hungover. But other than that, I’m just eating a lot more fruit, which is great!
Today went a little like this:
1 piece of toast
(I’m out of orange juice! AGH!)
Burrito Bowl (with avocados, yum!)
Red Lentil and Cauliflower Curry (Recipe Coming soon!)
