Eating fruit out of season is not something I normally do, but I saw a recipe for Grilled Peaches Jezebel in 1001 Ways to Cook Southern and had to try it!
GRILLED PEACHES JEZEBEL
This recipe combines a mix of spicy, sweet, and tart. I absolutely adore it and can’t wait to try it when peaches are actually in season and more ripe than these guys were.
2 ripe peaches, halved and pitted
1 Tablespoon Honey
1 teaspoon Dijon mustard
1 teaspoon horseradish
Vegetable Cooking Spray
Coat the grill of a toaster oven with cooking spray and preheat toaster oven to 350F.
In a small bowl, whisk together honey, Dijon mustard, and horseradish.
Cook for 5 minutes, then flip so the cut is directly on the grill. Cook 5 more minutes.
Remove from grill and brush each half with the remaining honey mixture.
These peaches are great for a hearty snack or a side. They’re very filling and sweet, but have a nice horseradish and mustard kick to them. They’re even sweet enough to satisfy my cravings for sweets, but spicy enough for me to call them dinner!
I used Sandwich Pal Horseradish, because that’s the kind of horseradish we always have at my parents’ house. There’s no better pal than a sandwich pal. Why is that not their slogan?
The original recipe uses an actual grill, which I lack. I’d love to try some this summer with some pimento cheese stuffed black bean burgers (also inspired by 1001 Ways to Cook Southern) and some chili-lime grilled corn.
Today, it was 57 degrees outside. It was amazing. I need summer, now.
